We are loving this coconut matcha waffle recipe by The Happy Toddler!
Ingredients
Dry Ingredients
- 2 cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 3 teaspoons Matcha Green Tea Powder
Wet Ingredients
- 2 large Eggs
- 1/4 cup Raw Honey
- 2 tablespoons Coconut Oil
- 1 cup Milk Any kind of milk will do. I used whole.
Instructions
Mix dry ingredients
Stir wet ingredients until the honey is dissolved and then blend in a blender so that the coconut oil is fully incorporated.
Combine the two bowls and pour into a pre-heated waffle maker.

Incredible. Almost as if you are drinking hojicha from a Japanese cafe or coffee shop. Very rich in flavor, color is beautiful, and blends well with all sorts of milk.

While I've tried genmaicha tea in the past that you have to steep, this is a unique option which is powdered, (like matcha tea.) Mixing rice in with the matcha not only keeps costs down, but it adds its own unique benefits to the mix.
While I typically stick to their "Emerald," as it was difficult finding an affordable ceremonial option to drink daily as a regular tea, this is another unique offering by Midori Spring.

I purchased this because I kept seeing it in my email as if I was subscribed to the website but I don’t remember doing so. Anywho I purchased it and this is the best tasting matcha I’ve ever had. My go to was aiya which is good also but this is better tasting by far. The only thing I didn’t like was the shipping it took two weeks or a little longer to get here but customer service was excellent and fair. Overall Love love love. Gives a little boost in energy as well.

While culinary grade matcha options can often taste just fine as a cold brew, which neutralizes any unpleasant "seaweed" notes, it is awesome to discover an affordable ceremonial grade option that tastes amazing hot, called Emerald, by Midori Spring!
My biggest issue in the past, was that drinking matcha cold or adding creamers never seemed to bring the same amazing feelings or health benefits.
So thanks so much Midori Spring for providing an affordable, yet amazing, daily matcha option that I can drink straight. (And it goes great with my anime binges!) 😁

I have been a customer of Midori springs for over 7 years. The new packaging & “Hoji” definitely caught my eye. Convenient enough, I had already giving up coffee before, so this is a nice option to have if I want to make a “mocha”. It isn’t an exact replica of espresso by any means, it taste more like a medium-light roast drip coffee - but it’s definitely fun to have on hand! Plus I can now have “afternoon matcha” since it has less caffeine. :) Thanks Midori!
